This recipe online was from food network's Alton Brown. This recipe recommends that you let the dough the sit for 50-55 minutes which is 10 or so minutes more than Wetzel's Pretzels.

I looked through all the cookbooks at my house and I found this Emeril book with these twists that are pretzels just shaped differently. It states to let cover the bowl the dough is in with a towel and let it sit for 30 minutes. This would be 15 minutes less than original recommended.

This is from the CookBook Project online. It stated to let the dough sit in a warm place for 45 minutes. This is the first recipe to recommend the time Alejandra told us.
The only real way we could confirm or deny that the 45 minute waiting time would be the best is if we tried all of the recipes and see which came out the best.
